How many credit cards are too many? Also, if you have "too many" cards, will your credit score improve if you cancel some of them?

There is no exact figure on how many plastics are enough. Some people feel ok with 3 credit cards. Others can manage 6 plastics without any problems. In general, it is not recommended to apply for more than 8-10 cards. The fewer plastics you have, the easier it is to prevent excessive spending. It will be more convenient to track your spending and control your total debt level. Keep in mind that closing your accounts may hurt your FICO score. Credit bureaus take into consideration the utilization ratio - the percentage between your debt and available credit. You need to keep your utilization ratio less than 30%. When you cancel a credit card, you reduce the amount of available credit, but your debt remains the same. It makes your utilization ration higher. So if you want to close your accounts, try to pay off your balances.
